Meet Laurie
Laurie Barenblat holds a Masters in Food Policy and Applied Nutrition from the Tufts University Friedman School of Nutrition Science and Policy in Boston, Massachusetts. Along with her coursework, Laurie interned with the Institute for Community Health, working on both Growing Healthy and the Healthy Weight Project. With Growing Healthy, Laurie designed recipes using the fruit and vegetable of the month to provide taste-tests in local elementary schools. She also developed a voting system and data analysis to evaluate the effectiveness of the program for the students, parents, and food service staff, as well as their level of desire to change school lunch. As part of the Healthy Weight Project, Laurie surveyed parents and children to assess their attitudes and beliefs towards healthy living and the children’s eating and exercise habits. She then designed survey methodology to code and record the findings.
After moving back home to Dallas, Laurie worked as the Healthy Living Classroom coordinator at the Whole Foods Market in Plano, Texas. She created monthly calendars of classes and managed the appropriate players, including guest chefs, nutrition professionals, and assistants, in order to provide high-quality, enlightening, and entertaining classes. She also led educational store tours and taught cooking and nutrition classes for children and adults.
Laurie helped develop Curbside Fitness, an in-home fitness and nutrition education service, and has now branched out to create her own consultancy business. In addition, she has consulted for small corporate wellness businesses and has given speeches and telesminars for businesses and nonprofits, including ExxonMobil, City Credit Union, The National MS Society, Pearson, and State Farm. Laurie offers creative, yet simple, ways to help her clients reach their goals and progress toward a healthier lifestyle.
Laurie is a Certified Eating Coach and a member of Slow Food Dallas.
In addition, she attended the Charbonneau Speakers Academy through the North Texas Chapter of the National Speaker Association
in 2007-2008. Through this Academy, Laurie received mentorship,
coaching and training from experts in the field of professional
speaking.
